Kokorozashi was founded in the heart of Hong Kong (Tsim Sha Tsui) by Chef-owner David Man, who began his culinary journey at the age of 18. Chef David has been a sushi lover ever since he was a child when his mother took him to his very first visited sushi restaurant. 

 

Before opening Kokorozashi, he was trained at Sushisho Masa (who is regarded as one of the best sushi masters in Tokyo). Working as a young chef in Hong Kong, Chef David's sushi style was deeply inspired by his mentor, Sho Masa. 

 

At Kokorozashi, we served Omakase(leave it up to the chef) with Edomae techniques such as aging, marinating, pairing and processing. With Chef David's consuming passion for sushi, he ran his own respected restaurant Kokorozashi and had maintained a high reputation in the five years of opening. 

 

In 2024, Chef David began a new adventure in life and moved to the UK with his family. He will continue to pursue his dream, that is to bring the joy of having sushi to everyone he will meet in the future!
